Double Cherry Taco Salad

This zesty and colorful cherry taco salad took a distinguished First Place from our celebrity judges in the 2011 Friske's 8th Annual Cherry Recipe Contest! Grab a bottle of your favorite cherry salsa
(we recommend Friske's Red Cherry Salsa! Available Online) and head to the kitchen!
Ingredients
Meat
3/4 lb. - Fresh Chorizo sausage (w/out skin)
1 medium onion, chopped
1 clove garlic, minced
1 C Friske Red Cherry Salsa
Salad
4 C shredded lettuce
1/2 C chopped green pepper
1/2 cup shredded cheddar cheese
1/2 C dried cherries
12 cherry tomatoes, halved
8 oz. Tostitos Scoops
Dressing
4 C shredded lettuce
2 medium tomatoes diced
4 tbsp olive oil
4 tbsp fresh lime juice
1/2 tsp salt
1/4 tsp ground black pepper
Directions
In large skillet cook meat, onions, garlic until meat is no longer pink & onion is tender. Drain fat. Stir in Friske's Red Cherry Salsa & simmer uncovered for 10 minutes. For dressing: in a medium bowl, combine tomatoes (w/ juices), oil, lime juice, salt & pepper. Divide lettuce on 2 plates. Divide remaining salad ingredients & spread Tostitos Scoops on top of salad. Divide meat mixture over Scoops & serve w/ extra Cherry Salsa.
